According to מורי ורבי הרב הגאון ר' שלמה מילר שליט"א Ashkenazi Yidden (Yekkis) whose Minhag is not to wait six hours after meat ( 3 hours- 1 hour ), may continue to do so only in such cities where they have an Ashkenaz (Yekki) Kehilah. In a city where no such Kehilah exists, one must accept the חומרא המקום שהלך לשם (Minhag Hamakom) and wait six  hours after eating meat
